One of the things that I miss the most (given that I no longer eat grain or sugar) is bread. Those of us who have serious enough gut issues that we are following the Specific Carbohydrate Diet (SCD) can’t eat regular gluten-free products because they are still starch-based. That means we have few off-the-shelf bread options. (In fact, if you know of any, I expect you to tell me RIGHT NOW.) In the meantime, we are stuck baking our own substitute “bread” using products like almond flour. Prasad has created at least three almond flour “bread” recipes that are as close to the real thing as anything I have tried — especially toasted. My favorite is the Focaccia flatbread recipe; that is my go-to recipe when I absolute have to have something between two pieces of “bread.”
Trust me on this: I did not inherit “cooking” or “baking” genes. These bread recipes are quick, easy and practically fool-proof. The only challenge is making sure that you have SCD yogurt and farmer’s cheese on hand.
This book has many other main course recipes that are good but this is my go-to book for bread.
